Aubergine Pasta Sauce

Quick and easy for all the family as you are blending in all the veg, so even for fussy eaters! You could swap aubergine for any vegetables and even add more. Great for weaning babies, I used to do this a serve with the tiny baby pasta.


Serves 4


Olive oil for cooking

3 cloves of garlic finely chopped or crushed

1 aubergine, chopped into cubes

2 tins on chopped tomatoes

2 teaspoons of tomato paste or puree

150ml chicken/veg stock or water



Add 3 tbsp. olive oil to pan

Add garlic and sauté for 3-5 minutes at a medium heat

Add the aubergine, this will soak up a lot of oil, add a little more if you need to

Sauté aubergine for another 5-7 minutes, stirring occasionally

Add tomatoes and stock and tomato paste

Bring to boil

Then simmer at a medium heat lid off for 15-20 minutes


Take of heat and either wait to cool and blend or if blending when hot then in a blender put the top on but not the middle part of the blender and cover with a doubled-up tea towel, hold it tightly over the top, this will stop it exploding everywhere. If cold, you don’t need to do this.


Serve with pasta and steamed broccoli and carrots as a side or a salad. For extra protein you could add chickpeas to the sauce or add to the veg or salad.
